“School cafeterias are much criticized for offering the kind of snack foods and desserts that contribute to childhood obesity. But banning junk food from cafeterias, as some schools have tried, or serving only escarole or tofu, can backfire,” write Brian Wansink, David R. Just and Joe McKendry in the New York Times.

They have come up with some simple, effective ways to encourage good nutrition without letting healthy eating become a battle between concerned adults and doubtful children.
