BATH, Maine — Hank Shaw, author of “Hunt, Gather, Cook: Finding the Forgotten Feast” (Rodale 2011) and “Duck, Duck, Goose: Recipes and Techniques for Cooking Ducks and Geese” (Ten Speed, October 1, 2013), 2013 James Beard Award winner, Best Food Blog, and Chef Michael Quigg of Beale Street Barbeque have collaboratively designed a duck and goose dinner to be offered at Beale Street Barbeque in Bath on Oct. 30. The dinner is designed to present several species of domestically available duck & goose with an emphasis on versatility and an eye to the October hunting and harvest seasonal food Maine has to offer. Hank will be meeting guests, signing books, and discussing techniques for cooking wild and domestic waterfowl, as well as hunting, fishing & foraging techniques and recipes for North American wild foods.
