Chicken Apple Stir Fry
2-3 pounds boneless, skinless chicken breast
1 clove garlic, peeled and crushed
1 small onion, peeled and chopped
3 cups apple cider
1 large McIntosh apple, peeled and cored
3 tablespoons lemon juice
1 large Granny Smith apple, peeled and cored
1 large Red Delicious apple, peeled and cored
1 large Golden Delicious apple, peeled and cored
4 tablespoons extra virgin olive oil
¼ teaspoon salt
¼ teaspoon pepper
Cut chicken breast into 1-inch strips. Marinate in apple cider 1 hour. Cut apples into 1-inch strips and coat with lemon juice to prevent browning. After marinating blot chicken with a paper towel. Toss with salt and pepper until coated. Into fry pan or wok put in olive oil, chicken and garlic. Add apples and stir in with chicken mixture. Cook until done, about 10-12 minutes.
